Tonight we wanted to do breakfast for dinner, but found we were out of pancake mix. Looking through the pantry we found two options and decided that the Pumpkin Quickbread mix was the best option.
I went and looked up a couple of pancake mix & decided less eggs, no oil & more water.
When we discovered a lack of eggs, I just went mix & water. Roughly as much wet ingredients as the directions said went in as water.
The results were great.
I mixed the batter, my wife cooked them & said that the key was a low heat and good amount of time.
